Head Chef at New York City restaurant Oceana Ben Pollinger, seeks to include Icelandic ingredients in his dishes, mbl.is reports. Now, Icelandic Arctic Char is on the menu.
Pollinger, who visited Iceland as a participant in the annual Food and Fun Festival, has also served Icelandic langoustine and codfish. In addition, he has been experimenting with the Icelandic dairy product skyr.
